Legume crops, like alfalfa and beans, have the ability to fix nitrogen from the air and deposit it in the soil. For this reason, many gardeners use these plants as cover crops, or green manures. Cover crops can be mulched into the soil to provide nitrogen for other non-nitrogen fixing garden plants.
